50g onion
50g carrot
100g beef
5 shiitake mushrooms
2 tree ear mushrooms
2 eggs
50g dried glass noodles
2 teaspoons soy sauce
1 teaspoon sugar
2 teaspoons chopped green onion
1 teaspoon chopped garlic
1/2 teaspoon sesame seed
2 teaspoons sesame oil
1 teaspoon soy sauce
1/2 teaspoon sugar
1 teaspoon sesame oil
* Serves four people
Directions
1. Blanch spinach in hot water and rinse it in cold water and drain.
2. Stir fry the spinach slightly with oil.
3. Slice onion and green onions and stir-fry in oil.
4. Cut the carrot in thin six-centimeter strips and stir-fry in oil.
5. Cut beef into matchstick strips, marinate it in soy sauce and sugar mixture and stir-fry.
6. Soak shiitake mushrooms and tree ear mushrooms in water.
7. Slice shiitake mushrooms into thin strips and season with salt. Stir-fry quickly.
8. Shred tree ear mushrooms and stir-fry adding salt.
9. Separate the yolks and egg whites and fry each in very thin layers. Cut into thin 6-centimeter strips.
10. Boil the glass noodles in hot water, and then rinse in cold water and drain.
11. Cut the noodles in half with scissors, and marinate with soy sauce and sugar mixture. Stir-fry in oil.
12. Add noodles with cooked vegetables and beef.
13. Add roasted sesame seeds and sesame oil. Toss until the ingredients are mixed.
14. Serve on a plate with the egg garnish on top.
